Taco Tuesday Recipes

Cinco de Mayo is this week and what better way to celebrate than with some delicious taco recipes! Whether you're planning a big fiesta or just looking for some tasty recipes to enjoy at home, Taco Tuesday is the perfect excuse to whip up some Mexican inspired dishes. In this blog, we'll explore some mouthwatering taco recipes that are sure to be a hit at your Cinco de MAyo celebration.

Classic Beef Tacos

 

Ingredients: 

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 8 small taco shells 
  • Toppings of choice: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa

 

Instructions: In a skillet, cook the ground beef over medium heat until browned. Drain excess fat. Stir in the taco seasoning and cook according to package instructions. Heat the taco shells according to package instructions. Fill each taco with the seasoned beef and top with your favorite toppings. 



Grilled Chicken Tacos

 

Ingredients: 

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin 
  • Salt and pepper to taste
  • 8 small flour tortillas 
  • Toppings of choice: avocado slices, diced onions, cilantro, lime wedges

Instructions: In a bowl, combine olive oil, minced garlic, chili powder, cumin, salt, and pepper. Add the chicken breasts to the bowl and toss to coat evenly. Heat a grill pan over medium-high heat and grill the chicken for 6 to 8 minutes, or until cooked through. Remove the chicken from the grill and let it rest for a few minutes before slicing. Warm the flour tortillas on the grill for about 30 seconds on each side. Fill each totilla with sliced chicken and your choice of toppings.

Veggie Tacos

 

Ingredients: 

  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Toppings of choice: diced avocados, salsa, chopped cilantro, lime wedges

Instructions: Heat a skillet over medium heat and add a drizzle of olive oil. Add diced onion and bell pepper to the skillet and cook until softened. Stir in the black beans, corn, chili powder, cumin, salt, and pepper. Cook for an additional 3 to 4 minutes. Warm the corn tortillas on a skillet for about 30 seconds on each side. Fill each tortilla with the veggie mixture and top with your favorite toppings.
